You know I'm sad about the bread situation.
Although...my friend Christina just left me a Paleo bread recipe that she says is fantastic! I'll try it out and get back to you on that.
I found this Rocky Mountain Caramel Corn at Whole Foods and I'm in love!
I can go to the movies again! I just have to stash this in my purse.

ReplyDeleteI hope you won't be disappointed! It really is the best gluten free bread we've tried. She suggests wrapping it in a paper towel, putting it in a plastic bag and keeping in the fridge. That's what I do. You don't have to toast it to taste decent. I love that it isn't "gummy". Plus, to know that you are eating bread that is filled with really good stuff for you ... it's a win-win. Mainly it's a HUGE win for me b/c my son won't eat protein other than peanut butter. That bread has over 70 grams of protein in the entire loaf ... a little over 21 net carbs for the entire loaf. It's awesome nutritionally. Don't expect amazing light sourdough bread ... but it's as close to tasting like a great whole wheat bread that I used to enjoy. Oh, and trouble shooting - Elana says that Bob's Red Mill Almond Flour doesn't work well in her recipes. That's another reason I buy the almond flour on-line. I invested in quite a few "expensive" ingredients - almond flour, coconut oil, coconut flour, flax seed meal, honey, and a HUGE thing of vanilla - and I can make virtually any recipe on her site and stay within the diet constraints of Paleo/GAPS (the diet we are trying to stay on for my son's autism). Her site has sooo many wonderful recipes. I've tried many and purchased both cookbooks. Everything was worth it!!

This Flatbread is super easy to make and this website is great for baking. Even my mother likes this flatbread (with her hummus) and she doesn't even eat "gluten free"

Have you tried Feel Good Foods Gluten Free Dumplings? YUM! I think they have them at Whole Foods.
